I thought I would respond to this (even though I'm not a pro) because the mower I use for my own garden seems to meet all of your criteria above, except single lever height adjustment. I have a Honda HRX537. You can pick them up for less than £1000, so shouldn't break the bank either.
Hayter 48 pro £799 plus free stuff at the moment at FR Jones, does everything I think you will need. I have got a few and am very pleased with them.

What doesn't a Honda model do that you ask for? I think it meets the mark, either a domestic 476 or a 536HRH pro model?

The Viking semi-pro would tick every box, plus has a BBC for good measure. The 21" comes in under a grand, and is light and very fast. Way faster than the Honda Pros, and way better in the wet.
On the downside, I got mine at Easter. Since then I've had a drive shaft fail, two new gearboxes and a drive cable. All under warranty, and a loan machine whilst it's in for repair, but it does raise concerns about the build. I've only had two cables fail in about 15 years of Honda Pro ownership!
The time backwards and forwards to the dealer wipes out the speed of the machine...
The trouble with the Hondas is you know you're buying a very heavy machine, not great in smaller gardens, and that the roller is a very expensive consumable. I think you'd struggle with one after an 18" Hayter, but try the Kubota-made Honda Pro if your dealer has one in: it's slightly better than the Honda, and a few hundred cheaper.

They aren't pro machines, and so the warranty will be 90 days. The bag is pretty rubbish, but it works.
I had one on loan whilst the Viking was repaired, probably three weeks with a machine that's been shagged-out by contrators. It was not as good in the wet as the Viking, but better than the Honda, or it's clones. Far more useable in smaller spaces than the Hondas, as well. I really like it, the only let-down is the lack of a BBC.
It will break down, but if you have two that's less of an issue. Parts seem cheaper, and even old machines hold a value as they are rare.
£1600 for two 555s, compared with, say, £1200 for one Honda-type? You need a back-up mower, so two 555s work out about the same as one Honda/Kubota/Lawnflite/Kaaz, and an ebay-special Etesia? Tough call.
