What sort of work do you do and what are you expecting of them?
The general employment theme has been covered on here lots of times since I joined just a few months ago and I'd be surprised if there weren't lots more threads in the archives.
From my own experience, it depends a lot upon on what you want to get out of people and how you go about it. Yes there are wasters wanting wages for doing very little. But you have to be clear about what you want, express that in your advert, and think through how to treat a new employee to get the best out of them.
Some key places to look/advertise are the Pitchcare website and possibly agrifj.co.uk as they are the kind of places that people with relevant skills go - we found Reed was really office based jobs, and we've had some interest with adverts on gumtree.

Explain on your advert that grafting is a big part of the job,so the person must be physically fit and they must also be prepared to work overtime at short notice. if that doesnt separate the wheat from the chaff nothing will!
Your local job centre should be prepared to give you some help, a mate of mine recently took a lad on with their cooperation. Because he was getting a lad off the dole, they gave him an interview room and a member of staff to help interview candidates for the day, all for nothing!
