Edible Flowers

This year I have really enjoyed eating Hemerocallis (Day Lilies) as they have been particularly abundant in my garden this year. They taste quite sweet with a mildly crunchy texture unlike anything else I can think of. Their beautiful colour and form is enough to make any dull looking salad transform into something quite exciting!

I've also tried, for the first time, eating Elder flower fritters dipped in icing sugar, which were delicious! A basic batter is all that is required to dip the flower heads into then fry for only a couple of minutes, using the stalk they are removed from the pan, sugared, then eaten (discarding the stalks). 

There are recipes for stuffed courgette flowers which I have yet to try as I'm ashamed to say the flowers don't last that long in my hands as they are quite tasty freshly picked! Nasturtiums I find too peppery for my taste but can also be added to salads as can viola flowers but I can't say that their taste was sufficiently enjoyable to justify depriving myself of the pleasure of their flowers in the garden.

I'm sure there are many more we could eat. Any suggestions? What did you think of them?

  • Lovely Pic. I believe Calendula and Borage are supposed make a good addition to salads.

  • Calendula is lovely when added to cous-cous - the strong flavor becomes milder but still pleasent.
